Bacon is mostly fat tissue lying directly beneath the skin of the pig‚€ôs belly and is salt cured and smoked. Serve alone, add to sandwiches, wrap around roasts or other cuts of meat, cut into strips to add to stews or braised dishes. Medium heat should be used when sauteing bacon. This prevents the fat from rendering out before it is cooked through, which happens at low temperatures, or from the bacon browning or burning before enough fat has rendered, which happens at high temperatures. Save the bacon grease to use in cornbread or for frying eggs or caramelizing onions.
