Description

Filet mignon is a steak cut from the smaller end of the tenderloin, which is the most tender cut of beef containing relatively little connective tissue.  Recommended preparation is by grilling, pan frying, broiling, or roasting - first by searing each side with intense heat for a short time and then transferring to a lower heat for the meat to cook completely through.  Filets typically have low levels of marbling or intramuscular fat, and so they benefit from bacon wrapping.
