Description
Liver is a type of offal or organ meat and is important for nutrient storage in the goat. Liver is particularly high in vitamin A, vitamin B12, and iron.
Cut into thin slices and pan fry. Marinate sliced or whole livers in lemon juice for several hours before cooking in order to draw out any impurities and tenderize its texture. Saute breaded slices with butter and pair with caramelized onions and bacon or a creamy mushroom sauce or prepare a goat pate.
