Description
Smoked pork shank is the same thing as smoked ham hocks, which is the first joint of the leg closest to the trotters. The hock is mostly skin and bone with a little tough meat and lots of connective tissue, which provides lots of flavor and gelatin. Smoked hock is best added to soups and stews to give richness and can be chopped up and added back to whatever dish it has been cooked in for additional flavor. Smoked hock is particularly good for boiling in soup with lentils, dried peas, or other legumes. Smocked hock requires a long, slow cooking of at least a few hours in order to release flavor and become tender. Also try slow cooking hock with baked beans in a tomato barbeque sauce or make a classic version of Boston baked beans with ham hocks.
